N.B. Be careful serving raw egg to vulnerable (i.e. the young and old).
1 pint whipped cream
3 tablespoons vanilla sugar
1 egg white whipped until stiff
(see measure conversions for more information)
- Put the puree into a saucepan with the sugar.
- Heat gently and stir until smooth.
- Cool and fold in the cream and egg white.
- Pour into suitable moulds and chill for 3 hours.

25 Sweet chestnuts shelled and cooked until soft1 pint whipped cream

- Heat gently and stir until smooth.
- Cool and fold in the cream and egg white.
