How to make sweet and sour rabbit:
A definite change from the usual rabbit pie or stew. Chicken or pork could be used just as easily but rabbit make an interesting alternative.


4 large rabbit pieces, boned
1 small carrot, peeled and sliced
1 small onion, peeled and chopped
1 tablespoon cornstarch
1 1/4 cups water
4 teaspoons honey
2 tablespoons soy sauce
2 tablespoons wine vinegar
1 teaspoon ground ginger
freshly ground black pepper
1/2 cup diced, fresh pineapple
1 cup bean sprouts

- Cut the rabbit into small pieces.
- Put the pieces into a large saucepan with the carrot and onion.
- Put the cornstarch into a bowl and mix it to a smooth paste with a little of the water.
- Add the rest of the water to this paste, stirring until smooth.
- Bring to the boil in a saucepan, stirring all the time.
- Pour it over the rabbit and vegetables.
- Add the honey, soy sauce, vinegar and ground ginger and season with pepper.
- Bring to the boil, cover and simmer for 1 1/2 hours, stirring
occasionally, until the rabbit and vegetables are tender.
- Add the pineapple and reheat for 5 minutes.
- Serve immediately with the bean sprouts and boiled rice, if liked.
