How to make stuffed peppers:
This could also be used a vegetarian main meal by removing the lamb and adding your favorite vegetables.


4 large green or red peppers
2 cups chopped onion
1 clove of garlic crushed
1/2 cup long-grain rice
4 1/4 cups bouillon
2 tablespoons tomato paste
1 teaspoon mint sauce
2 teaspoons sugar
2 cups lean cooked lamb, diced

- Cut the tops from the peppers and remove the seeds.
- Blanch them in boiling water for 3 minutes and drain.
- Put the onion, garlic and rice in a saucepan and cover with the bouillon.
- Add the tomato paste, mint sauce, sugar and lamb and bring to the boil.
- Cover and simmer for 20 minutes, until the rice is tender and has absorbed all the bouillon.
- Season to taste.
- Stuff the peppers with the rice mixture and place in an ovenproof dish.
- Cover and bake in oven at 180 degrees centigrade (see temperature conversions) for 30 minutes.
