How to make stir-fry chick peas:
A tasty, spicy and quick vegetarian meal.


2 tablespoons sunflower seeds
1 medium can chick peas, drained and tossed in 1 teaspoon chilli powder and 1 teaspoon paprika
2 tablespoons vegetable oil
1 clove garlic, peeled and crushed
1 small tin chopped tomatoes
8oz fresh spinach, washed and stalks removed and chopped or torn into small pieces
salt and freshly ground pepper
2 teaspoons chilli oil

- Dry fry the sunflower seeds in a wok until they are toasted.
- Take the sunflower seeds out of the wok and leave aside.
- Stir fry the garlic in the oil in the wok for about 30 seconds.
- Add the chick peas.
- Stir in the tomatoes.
- Cook for about 5 minutes.
- Add the spinach.
- Season.
- Stir fry for about 1 minute.
- Stir the chilli oil and sunflower seeds into the chick pea mixture.
