How to make Stilton cheesecake:
Serve this as a main meal with a large green salad and a baked potato. This cheesecake is also useful served in small slices as a starter.


8 tablespoons oatcakes, crushed
1/2 cup butter (unsalted)
1/2 cup cream cheese
5 tablespoons Stilton cheese, crumbled
3 eggs beaten
small pot crème frâiche
1 tablespoon chives, finely chopped
1 tablespoon parsley, finely chopped

- Melt the butter in a saucepan and stir in the crushed oat cakes.
- Mix well.
- Press onto the base of a loose bottomed baking tin.
- Chill in fridge for about 2 hours.
- Combine the stilton with the cream cheese.
- Fold in the eggs, herbs and crème frâiche.
- Smooth this mixture over the oatcake base.
- Bake at 180 degrees C. (see temperature conversions) for about 40 minutes.
- The top should be golden brown.
- Decorate with a little lamb's lettuce and serve.
