How to make stewed tripe:
At one time tripe was a very popular dish. Let us know what you think about tripe.


1/2lb dressed tripe, cut into bite sized pieces
1/2oz butter
1/2oz flour
1/2 pint milk
salt and pepper
(see measure conversions for more information)


- Make a white sauce from the butter, flour and milk.
- Season to taste.
- Add the tripe to the sauce.
- Simmer very gently for 30 - 40 minutes.
- Serve hot with toast or vegetables of choice.

Serve with Florence fennel salad
