How to make Stelk:
A dish that is very similar to the Irish Champ. It probably originated from the same motives of speed and economy.


5 medium potatoes
1/4 cup butter
bunch scallions
salt and pepper
(see measure conversions for more information)


- Peel the potatoes and boil them in salted water.
- Mash them and add most of the butter.
- Keep hot.
- Chop the scallions and cook in a little milk until tender.
- Add to the potatoes, together with the milk and seasoning and beat until fluffy.
- Pile on to serving plates dotting each serving with a little of the remaining butter.
