bunch scallions

- Mash them and add most of the butter.
- Keep hot.
- Chop the scallions and cook in a little milk until tender.
- Add to the potatoes, together with the milk and seasoning and beat until fluffy.
- Pile on to serving plates dotting each serving with a little of the remaining butter.
