1/2oz butter
1 heaped tablespoon grated parmesan
4 eggs
salt and pepper
3oz ham, chopped
1oz butter
1/2oz flour
1/4 pint single cream
salt and pepper
(see measure conversions for more information)
- Heat in a saucepan.
- Stir in butter, cheese and seasoning.
- Add the egg yolks one at a time.
- Fold in the stiffly beaten egg whites.
- Turn onto a Swiss roll tin lined with baking parchment.
- Smooth the surface.
- Bake at 400 degrees F., or until firm and springy to the touch.
- Add the flour, cream and ham.
- Cook stirring for a few minutes.
- Season.
- Remove from heat.
- Peel off the paper.
- Spread with the mushroom and ham filling.
- Roll up quickly using the tea towel to gently push the sponge "over".

To make filling:
- Fry the mushrooms in the 1oz butter.- Add the flour, cream and ham.
- Cook stirring for a few minutes.
- Season.
- Remove from heat.
To finish the roulade:
- Turn the soufflé out onto a clean tea towel.- Peel off the paper.
- Spread with the mushroom and ham filling.
- Roll up quickly using the tea towel to gently push the sponge "over".
