4 large eggs, beaten together
4 heaped tablespoons finely chopped cooked spinach
3 large tomatoes, skinned and chopped
4 heaped tablespoons diced cooked potato
salt and freshly ground black pepper
1 level tablespoon finely chopped mixed fresh herbs to taste
(see measure conversions for more information)
- Add the beaten eggs.
- Sprinkle the spinach, tomatoes and potatoes over the surface of the eggs.
- Season and add the herbs.
- Cook until the underneath is lightly browned.
- Remove from the heat and tip onto a plate with the cooked side uppermost.
- Put the other tablespoon of butter into the frying pan.
- Heat gently and slide the frittata back into the pan with the more cooked side still showing uppermost.
- Cook for a few more minutes, then cut into portions and serve.

delicious and quick to make, the handful of fresh herbs really make it - AND it looks lovely. Instead of using the grill I tipped it on a plate & slid it back into the pan.
