2 medium carrots, peeled and cut into strips
1oz fresh root ginger, peeled and chopped very finely
8 spring onions trimmed and cut into pieces
1 yellow pepper, deseeded and cut into strips
6oz beansprouts
1 teaspoon cornflour/starch
2 tablespoons vinegar
2 tablespoons soy sauce
1 tablespoon runny honey
2 tablespoons olive oil
salt and freshly ground black pepper
(see measure conversions for more information)
- Add the honey, soy sauce and vinegar.
- Season with salt and pepper.
- Fry the pork, carrots and ginger in the oil over a high heat until browned.
- Add the onions, pepper and beansprouts and cook for about 2 minutes.
- Lower heat.
- Stir in the cornflour/starch mixture and cook until thickened.
- Serve with noodles.
