How to make spicy salmon stir-fry:
Salmon is a great low fat option and is high in essential fatty acids.


4 salmon steak fillets, skin removed
2 stalks lemon grass, sliced
4 star anise, crushed
juice 3 limes
zest 3 limes
2 tablespoons runny honey
2 tablespoons grape seed oil
salt and freshly ground black pepper
lime wedges to serve

- Mix together the star anise, lemon grass, lime juice, lime zest and honey.
- Add salt and pepper.
- Put into a non-metal container.
- Add the salmon.
- Cover and leave in fridge over night.
- Drain the salmon, keeping the marinade.
- Put the grape seed oil into a wok or frying pan.
- Heat oil and add salmon.
- Keep moving the salmon as it cooks.
- Turn up the heat and add the marinade.
- Bring to the boil.
- Serve with lime wedges.
