How to make spicy date cake:
A spicy, buttery cake sweetened and flavoured with dates.


10oz plain/all purpose flour
pinch of salt
1 level teaspoon baking powder
2 level teaspoons mixed spice
8oz butter
8oz caster/superfine sugar
3 large eggs, beaten
8oz chopped dates
(see measure conversions for more information)


- Sift the flour, salt, baking powder and mixed spice together.
- Cream the butter and sugar together until light in colour and fluffy in texture.
- Beat in the eggs, a little at a time adding a little flour after each addition.
- Stir 2 tablespoons of the flour mix into the chopped dates.
- Fold the flour and dates alternately into the creamed mixture using a metal spoon.
- Spoon into a well-greased, lined 8 inch cake tin.
- Bake at 180 degrees C. for 10 minutes.
- Continue to bake at 160 degrees C. for another 1 hour and 30 minutes.
- Leave to cool in the tin for 30 minutes then put onto a wire rack.
