2-3 strips lemon rind
1lb sugar
3/4 pint red wine vinegar
1 cinnamon stick
1-2 whole cloves
3 peppercorns
(see measure conversions for more information)
- Add the lemon strips.
- Simmer until the apples are just tender.
- Remove the pan from the heat and strain, reserving the liquid.
- Put 1 1/2 pints of the liquid into a clean pan.
- Add the sugar and vinegar.
- Tie the spices in a piece of muslin and add to the liquid.
- Heat gently, stirring, until the sugar has dissolved.
- Bring to the boil and boil for 1 minute.
- Add the crab apples.
- Simmer gently for 30-40 minutes.
- The syrup should coat the back of a wooden spoon.
- Remove the muslin bag.
- Put the fruit into sterilized jars.
- Pour the syrup over the fruit.
- Seal with airtight, vinegar proof tops.

These spiced apples are probably meant to be eaten as a pickle with cold meat or cheese. Does anybody know anything about this recipe and its uses?
