1 1/3 cupsful warm water
1 tablespoon honey
1 teaspoon ground nutmeg
2 teaspoons ground cinnamon
1 tablespoon ground mixed spice
1 tablespoon sea salt
3 cupsful wholemeal flour
3/4 cupful barley flour
4 tablespoons milk
(see measure conversions for more information)
- Add the honey.
- Leave in a warm place for the mixture to become frothy.
- Mix all the remaining dry ingredients together.
- Stir in the yeast mixture.
- Add the milk and mix to form a dough.
- Turn the dough onto a floured surface and knead for 10 minutes.
- Leave the dough in a warm place for about 1 hour to rise.
- Knead for a few more minutes.
- Put into a well-greased 2lb bread tin.
- Put in a warm place to rise for 1 hour.
- Bake at 180 degrees C. for 40 -45 minutes.
