3/4 teaspoon baking soda powder
1 teaspoon salt
1 1/2 cups buttermilk
2 eggs, separated
1/4 cup melted shortening
(see measure conversions for more information)
- Beat the egg yolks and add to the milk.
- Add the liquid to the cornmeal mixture and beat well.
- Add the hot melted shortening.
- Beat again.
- Whisk the egg whites until stiff and fold into the mixture.
- Turn immediately into a hot, greased skillet and bake in a hot oven (450 degrees F. see temperature conversions) for 25-30 minutes.
- Serve immediately with butter.
