How to make smothered onions:
When used in old recipes, the term 'smothered' means that the main ingredient is covered in (usually) a white sauce.


4 medium boiled onions
pepper and salt
2 tablespoons flour
4 tablespoons butter
1 pint milk
2 tomatoes
4 tablespoons grated cheese
(see measure conversions for more information)


- Place the onions and sliced raw tomatoes in a greased oven proof dish.
- Make a white sauce with the flour, butter and milk.
- Pour over the onions and tomatoes.
- Bake at 180 degrees Centigrade (see temperature conversions) for 10 to 15 minutes.
