How to make smoked chicken and avocado salad:
Serve this with a huge green salad and a bowl of new potatoes with butter and chopped mint. Sunday lunch on a hot summer's day without too much slaving over a hot stove!

9 tablespoons olive oil
1 teaspoon horseradish sauce
juice of 1 lemon
1/2 teaspoon green peppercorn mustard
2 ripe avocados, peeled, halved and stones removed.

sprigs of fresh coriander and lemon slices to garnish
(see measure conversions for more information)

- Whisk together the oil, lemon juice, horseradish and mustard to make a dressing.
- Add the chicken.
- Cover and leave for 1hour in a cool place.
- Cut the avocados lengthways into slices and sprinkle with the remaining dressing.
- Put the chicken and avocado slices alternately onto a serving plate.
- Garnish with coriander and lemon slices.
