Main Course - Smoked Chicken and Avocado Salad
Dessert - Raspberry and Lavender Pavlova
9 tablespoons olive oil
1 teaspoon horseradish sauce
juice of 1 lemon
1/2 teaspoon green peppercorn mustard
2 ripe avocados, peeled, halved and stones removed.
salt and pepper
sprigs of fresh coriander and lemon slices to garnish
(see measure conversions for more information)
- Add the chicken.
- Cover and leave for 1hour in a cool place.
- Cut the avocados lengthways into slices and sprinkle with the remaining dressing.
- Put the chicken and avocado slices alternately onto a serving plate.
- Garnish with coriander and lemon slices.

How to make smoked chicken and avocado salad:
Serve this with a huge green salad and a bowl of new potatoes with butter and chopped mint. Sunday lunch on a hot summer's day without too much slaving over a hot stove!Ingredients
2lb smoked chicken removed from the bone and cut into thin slices.9 tablespoons olive oil
1 teaspoon horseradish sauce
juice of 1 lemon
1/2 teaspoon green peppercorn mustard
2 ripe avocados, peeled, halved and stones removed.

Method
- Whisk together the oil, lemon juice, horseradish and mustard to make a dressing.- Add the chicken.
- Cover and leave for 1hour in a cool place.
- Cut the avocados lengthways into slices and sprinkle with the remaining dressing.
- Put the chicken and avocado slices alternately onto a serving plate.
- Garnish with coriander and lemon slices.
