Main Course - Sirloin Steak with Tewkesbury Mustard
Dessert - Rhubarb Layer with Clotted Cream
1/2 oz plain/all purpose flour
4 sirloin steaks
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
(see measure conversions for more information)
- Spread the mixture on top of the steaks.
- Line the grill pan with cooking foil and sprinkle the foil with the herbs.
- Place the steaks on the foil.
- Grill for 5 - 15 minutes, turning the steaks frequently until they are cooked to taste.
Thickness Rare Medium rare well done
¾ inch 5 9 – 10 12 – 15
1 inch 6 – 7 10 15
1 ½ inch 10 12 – 14 18 – 20

How to make sirloin steak with Tewkesbury mustard:
Beef and Mustard are a traditional pair; Tewkesbury mustard gives an unusual flavour, being made from a mixture of crushed mustard seeds and grated horseradish. If you can’t buy it, use wholegrain mustard and, in any case, wash the dish down with a pint of good British beer.
Ingredients
2oz Tewkesbury mustard1/2 oz plain/all purpose flour
4 sirloin steaks
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
