Simple Pumpkin Gnocchi
Pumpkin Gratin
Tomato and Pumpkin Soup
1lb pumpkin, peeled and chopped
6oz plain flour
2 1/2 oz melted butter
2oz parmesan cheese
(see measure conversions for more information)
- Drain and cool and pass through a sieve into a bowl.
- Add the flour to the pumpkin pulp, a little at a time, until a non-sticky dough is formed.
- Turn the dough onto a floured surface and knead thoroughly.
- Roll into lengths about 1/2 inch in diameter.
- Cut into 3/4 inch pieces.
- Roll each piece into a ball and flatten on one side with the back of a fork.
- Bring a large saucepan of water to the boil.
- Cook the gnocchi in the water, a few at a time.
- When ready the gnocchi will rise to the top.
- Use a slotted spoon to take gnocchi from the pan and place onto a warmed plate.
- Serve with melted butter and parmesan cheese.

How to make Simple Pumpkin Gnocchi:
A classic Italian pasta, gnocchi can be made with many flavours including pumpkin. Can be served as a simple starter or as a main meal with a tomato sauce.Ingredients

6oz plain flour
2 1/2 oz melted butter
2oz parmesan cheese

Method
- Cook pumpkin flesh in salted water until tender.- Drain and cool and pass through a sieve into a bowl.
- Add the flour to the pumpkin pulp, a little at a time, until a non-sticky dough is formed.
