3oz caster/superfine sugar
2oz plain/all purpose flour
pinch baking powder
1/2 pint double cream stiffly whipped and flavoured with vanilla extract
a little icing/confectioner's sugar to decorate top of gateau
(see measure conversions for more information)
- Whip whites until stiff and mix with the egg yolk mixture alternating with spoonfuls of flour.
- Add baking powder.
- Pile into two well-greased sandwich tins.
- Bake at 170 degrees for about 20 minutes.
- The two cakes should be well-risen and firm to the touch.
- When baked remove from oven and cool on a wire rack.
- When cold fill with cream and sandwich together.
- Sift a little icing sugar onto top of gateau.
