How to make Shropshire Blue Cheese Flan:
A delicious savoury cheese flan. Ideal for summer lunches as it an be served hot or cold with a light salad.


Shropshire Blue Cheese Flan
4oz plain flour
2oz butter
5oz Shropshire Blue cheese cut into thin slices
2 eggs beaten
1/4 pint of milk
2oz watercress stalks removed and finely chopped
pepper and salt

- Rub the butter into the flour.
- Mix in enough cold water and mix to form a pastry dough.
- Roll out on a lightly-floured surface.
- Line a well-greased flan dish with the pastry.
- Bake blind at 200 degrees C until the pastry is just firm but not browned.
- Remove from oven.
- Arrange the cheese in the pastry flan case.
- Beat the eggs into the milk.
- Season with pepper and salt.
- Add the onion and watercress.
- Pour the egg mixture over the cheese.
- Bake at 190 degrees C. for 45 minutes.
