How to make shortbread:
Widely regarded as a biscuit, shortbread is in fact "short" in the sense that it contains a large proportion of fat which makes it crumbly.

6 tablespoons plain flour
1/2 cup butter
2 level tablespoons caster/superfine sugar
a pinch of salt
(see measure conversions for more information)

- Sieve the flour and salt into a basin and rub in the fat with fingertips.
- Add the sugar and lightly work the mixture together until it binds.
- Roll out onto a lightly floured board to about a quarter inch thickness.
- Prick all over with a fork and then cut into rounds or fingers.
- Bake on greased tray at 150 degrees centigrade (see temperature conversions) for about 30 minutes.
- The shortbread should be light golden brown in colour.
