How to make sherry cake:
An extremely rich, dark cake with a very generous splash of sherry.


2 cups sultanas
3/4 cup soft dark brown sugar
1 tablespoon black treacle
3/4 cup butter
1 teaspoon bicarbonate of soda
1 teaspoon mixed spice
1/4 pint sherry
1/2 cup all purpose flour, sieved
2 eggs
(see measure conversions for more information)


- Lightly grease and line a 7in (18cm) round cake tin.
- Put the sultanas into a pan with the sugar, butter, treacle, bicarbonate of soda, mixed spice and sherry.
- Place over a low heat, stirring occasionally, until the butter has melted.
- Boil, reduce heat and simmer for 15 minutes.
- Put mixture into cake tin and bake at 150 degrees centigrade (see temperature conversions) until soft and spongy to touch.
