For a change, leave out the sugar and sultanas and flavour the scones with grated cheese or chopped fresh herbs.
1 level tablespoon sugar
3 cups flour
1 teaspoon baking powder
6 level tablespoons butter
1/4 pint milk and water mix (half and half)
(see measure conversions for more information)
- Rub the fat into the flour.
- Stir in the sugar and sultanas.
- Mix to a dough with the milk and water.
- Roll out on a floured board.
- Cut into rounds.
- Baked on a greased tray at 200 degrees Centigrade (see temperature conversions) for 15 - 20 minutes.

How to make scones:
Scones are a traditional teatime standby; easy and quick to make with ingredients that are usually in the store cupboard. Scones were very often made when there was sour milk to use up. Of course their most famous role is in a Cornish Clotted Cream Tea.For a change, leave out the sugar and sultanas and flavour the scones with grated cheese or chopped fresh herbs.

Method

1 teaspoon salt
about half cup double/heavy cream
- Sift the salt and flour together.
- Add enough cream to make a dough.
- Knead on a floured surface until smooth.
- Roll out as thinly as possible.
- Prick all over with a fork.
- Cut out with a cutter.
- Bake in a moderate oven on a well greased baking sheet until just browned.
