3 1/2 tablespoons fresh yeast
1 1/3 cup of warm water
2 1/2 cups wholemeal flour
1 cupful barley flour
1 teaspoon sea salt
1 tablespoon Soy
a little beaten egg
(see measure conversions for more information)
- Allow to become frothy.
- Mix together the wholemeal flour, barley flour and salt.
- Add the yeast mixture.
- Add the soy sauce.
- Mix to a dough.
- Knead for 10 minutes or until smooth and elastic.
- Cover and leave in a warm place to rise.
- Knead again for a couple of minutes.
- Put into a well-greased bread tin.
- Leave for another 10 minutes or so to rise again.
- Brush the top of the loaf with a little beaten egg.
- Bake at 200 degrees C. for 10 minutes.
- Reduce the heat to 180 degrees and continue cooking for a further 20 - 30 minutes.

How to make savoury barley loaf:
Flavoured with honey and soy sauce this unusual loaf makes a delicious change.
Ingredients
