1 heaped tablespoon ground rice
mustard powder to taste
pinch salt
black pepper
1/2 cup butter
1/2 cup Lancashire cheese, grated
3 teaspoons snipped chives
1 tablespoon single cream
(see measure conversions for more information)
- Rub in the butter until the mixture resembles fine breadcrumbs.
- Stir in the cheese and chives.
- Bind with the cream to form a dough.
- Press into a greased and floured 7-inch loose-bottomed flan tin.
- Prick all over.
- Bake for 1 hour until crisp and golden brown.
- Cut into 8 segments while still warm.
- Cool before removing from tin.

Never thought about savoury shortbread but boy are these good! Make a great snack - I've started taking them in my lunchbox to work.
