How to make savory shortbread with cheese and chives:
A novel variation on the more usual sweet shortbread. This is delicious eaten as a snack or as part of an after-dinner cheese course.


1 1/4 cups plain flour
1 heaped tablespoon ground rice
mustard powder to taste
pinch salt
black pepper
1/2 cup butter
1/2 cup Lancashire cheese, grated
3 teaspoons snipped chives
1 tablespoon single cream
(see measure conversions for more information)


- Sift the flour, ground rice, mustard and salt into a bowl.
- Rub in the butter until the mixture resembles fine breadcrumbs.
- Stir in the cheese and chives.
- Bind with the cream to form a dough. 
- Press into a greased and floured 7-inch loose-bottomed flan tin.
- Prick all over.
- Bake for 1 hour until crisp and golden brown.
- Cut into 8 segments while still warm.
- Cool before removing from tin.
