How to make savory pudding 2:
This is really a sort of savory bread and butter pudding and was usually served with goose, duck or pork.


1 egg beaten
8 slices bread, crusts removed
1/2 pint milk
2 tablespoons flour
1 large onion, chopped and boiled
2 tablespoons suet
1 tablespoon oatmeal
2 tablespoons butter
sage, marjoram, thyme, parsley chopped very finely (about 1 tablespoon in all)
salt and pepper

- Soak the bread in the milk.
- Add the flour and the beaten egg.
- Add all the other ingredients.
- This gives a stiff mixture.
- Heat the butter in a roasting pan.
- Add the pudding and cook in a moderate oven.
