How to make sausages in cider casserole:
A variation on the theme of pork with apples.


fat or oil for frying
1lb pork chipolatas
1 onion, peeled and cut into rings
2 celery stalks, washed and chopped
2 carrots, peeled and chopped
2 tablespoons flour
1/2 pint dry cider
1/4 pint vegetable stock
1 bouquet garni
salt and freshly ground black pepper
chopped fresh parsley to serve

- Brown the sausages in a pan in the fat.
- Add the vegetables and fry gently until lightly browned.
- Stir in the flour and cook stirring for about 2 minutes.
- Add the cider and stock.
- Bring to the boil.
- Put into an ovenproof lidded dish.
- Season, put in the bouquet garni and cook at about 190 degrees centigrade for about 40 minutes.
- Remove bouquet garni before serving and sprinkle the casserole with the parsley.
