How to make sausage and onion pie:
A great way to turn sausages into a more sophisticated main meal. Any sausages will do providing they are good quality and not too fatty.


Sausage and Onion Pie
1lb sausages, skins removed
1 medium onion, peeled and sliced
1lb plain flour
4 teaspoons baking powder
pinch salt
4oz lard
milk and water for pastry
(see measure conversions for more information)


- In a large basin add the baking powder to the flour.
- Rub the lard into the flour until the mixture resembles fine breadcrumbs.
- Mix to a dough with a mixture of milk and water.
- Divide pastry into two parts.
- Roll out one part of the pastry to line a pie dish.
- Place the sausages (whole or chopped) and the onions onto the pastry.
- Roll out the rest of the pastry to form a lid for the pie.
- Place this over the sausages, sealing the edges with a little milk.
- Cut a small slit in the top of the pie and decorate as desired with spare pastry.
- Bake at about 190 degrees C. for approx. 40 minutes making sure that the pastry does not get over brown.
