1 medium carrot, peeled and finely diced
1 medium onion, peeled and chopped
10 fluid oz red wine
salt and freshly ground black pepper
(see measure conversions for more information)
- Sprinkle the onion and carrot over the fish
- Pour the wine over the fish and vegetables.
- Season.
- Poach very gently for 15 minutes.
- Remove the fish with a fish slice.
- Keep hot.
- Boil the liquid and vegetables in the pan and allow to reduce.
- Serve with the fish and boiled new potatoes.
