Pan Fried Salmon with Champ and Broccoli

2 fillets salmon,
1 lemon
4-6 potatoes, peeled, boiled and mashed
3 spring onions, chopped finely
butter
olive oil
half head broccoli, washed
double cream
salt and pepper
(see measure conversions for more information)
- Season with salt and pepper to taste.
- Add the chopped spring onion to make the champ.
- Set aside the champ and keep warm.
- Roughly chop blanched broccoli.
- Put the broccoli into a saucepan with ten tablespoons of double cream.
- Simmer for about 7 minutes.
- Season to taste with salt and pepper.
- Set aside and keep warm.
- To cook the salmon, heat a generous knob of butter and some olive oil in a frying pan.
- Season the salmon skin with salt and pepper and score the skin with a knife.
- Place the salmon fillets skin side down and cook over a low heat.
- When the skin becomes crispy, turn the salmon fillets over and finish cooking on the flesh side.
- When cooked through, remove from the pan and serve the meal.

How to make Pan Fried Salmon with Champ and Broccoli:
Choose the best salmon you can afford and follow this simple recipe. Pan fry the scored fillets and serve them on a stack of vegetables with their own juices blended with lemon juice and butter.Ingredients

1 lemon

- Mash the potatoes with a little butter.- Season with salt and pepper to taste.
- Add the chopped spring onion to make the champ.
