How to make Rusks:
A plain hard-baked unsweetened cookie, Rusks are ideal for serving with butter and cheese and make an excellent substitute for bread.


2 1/2 cups self raising flour
4 tablespoons butter
4 tablespoons lard
1 egg, beaten
a pinch of salt
1 teaspoon sugar
a little milk
(see measure conversions for more information)


- Rub the butter and lard into the flour.
- Mix in the beaten egg and add the sugar.
- Make into a soft dough, adding a little milk if necessary.
- Turn onto a lightly floured surface and cut into circles of about 1/2 inch in diameter.
- Bake at 200 degrees centigrade (see temperature conversions) until nearly cooked then cut in half and return to the oven to finish cooking.
