1lb sugar
juice 2 lemons
(see measure conversions for more information)
- Cover and leave overnight.
- Pour 2 pints water and the lemon juice into a saucepan.
- Stir in the remaining sugar.
- Heat gently until the sugar has dissolved, but do not boil.
- Stir in the rose petals and simmer gently for 20 minutes.
- Bring to the boil and boil for about 5 minutes until the mixture thickens.
- Pot and cover as for jam.

An unusual jam with a very distinctive flavour. Only use roses that you are certain have not been sprayed.

- Place the petals in a bowl and add 8oz sugar.- Cover and leave overnight.
- Pour 2 pints water and the lemon juice into a saucepan.
- Stir in the remaining sugar.

- Bring to the boil and boil for about 5 minutes until the mixture thickens.
