onions, peeled and cut into thin rings

white wine vinegar
(see measure conversions for more information)
- Sprinkle each fillet with a few peppercorns and a little salt.
- Roll them up tightly and pack into jars.
- Add 1 chilli and a few onion rings to each jar.
- Cover with white wine vinegar.
- Leave in the fridge for about 5 days.
- They are then ready to eat.
- Delicious with sour cream.

How to make Rollmop herrings:
A Scandinavian delicacy where herrings are used extensively. The great benefit of herrings prepared in this way is that they become very tender and any stray bones (try not to leave any behind) do tend to become softened after a while.
Ingredients
