1 dozen Ratafia biscuits
raspberry jam
1 tablespoon sherry
1/2 pint cream
glace cherries
angelica
1/2 pint custard
(see measure conversions for more information)
- Split the sponge cakes, spread thickly with jam.
- Stick back together and place in a glass dish.
- Crush the Ratafia biscuits and sprinkle them over the sponge.
- Pour the sherry over and leave to soak for 1 hour.
- Pour the cold custard over the sponges.
- Pile the stiffly whipped cream over and decorate with angelica and cherries.

How to make Ratafia trifle:
Ratafia biscuits date back to at least the 1800's in the UK. They make an excellent change from the usual sponge based trifle.
Ingredients
6-8 trifle sponges1 dozen Ratafia biscuits
raspberry jam
1 tablespoon sherry
1/2 pint cream
glace cherries
angelica
1/2 pint custard

Method
- If making your own custard as shown in our recipe, leave it to cool.- Split the sponge cakes, spread thickly with jam.
- Stick back together and place in a glass dish.
- Crush the Ratafia biscuits and sprinkle them over the sponge.
- Pour the sherry over and leave to soak for 1 hour.
- Pour the cold custard over the sponges.
- Pile the stiffly whipped cream over and decorate with angelica and cherries.

Ratafia biscuits are very much like those italian Amaretti biscuits. They are small,crumbly almond flavoured biscuits.

i can't find ratafia biscuits , is there an alternative or do they come under a different name?
