2-3 tablespoons icing sugar
1 organic, free-range egg white
7 fluid oz water
3/4 cup granulated sugar
(see measure conversions for more information)
- Leave the syrup to get cold.
- Rub the raspberries through a sieve and sweeten to taste with the icing sugar.
- Gradually pour the cold sugar syrup into the puree, tasting to make sure that it is sweet enough.
- Freeze in a rigid plastic container until slushy.
- Whip the egg white and add 1 tablespoon of this to the slush, folding it in with a metal spoon.
- Continue to freeze, either using an ice-cream maker or a plastic container in the freezer.
- If you have no ice-cream maker remember to stir the water-ice several times to break up the ice crystals.
- Serve decorated with mint leaves.
