How to make raisin shortcake:
A traditionally made shortbread with an unusual orange flavour and a raisin filling.


4 tablespoons orange juice
4oz raisins
6oz plain/all purpose flour
2oz caster/superfine sugar
4oz butter
(see measure conversions for more information)


- Put the orange juice and raisins into a pan and bring slowly to the boil.
- Leave until cold.
- Sieve the flour into a basin.
- Rub in the butter.
- Stir in the sugar.
- Turn onto a floured board.
- Knead well and divide the dough into 2 pieces.
- Make into equal sized rounds.
- Put one round on a well-greased baking tray.
- Spread the raisin mixture onto the shortbread and put the other shortbread round on top.
- Press and pinch the edges together.
- Prick all over the top with a fork.
- Bake at 180 degrees C. for 45 minutes.
- Mark into portions.
- Cool in the tray.
