1 teaspoon sugar
3/4 pint warm water
4 tablespoons butter
8 cups strong plain flour
2 cups raisins
2 teaspoons mixed spice
(see measure conversions for more information)
- Rub the butter into the flour, mix in the raisins and spice, and then stir in the yeast mixture.
- Knead until the dough is pliable and no longer sticky.
- Cover and leave to rise until doubled in size and springy to the touch.
- Knead again, and place in 2 greased bread tins.
- Cover and leave to prove for 1 hour.
- Bake in a preheated oven at 230oC/450oF/gas mark 8 for about 20 minutes.

- Mix the yeast, sugar and water and leave in a warm place for 10 minutes until frothy.- Rub the butter into the flour, mix in the raisins and spice, and then stir in the yeast mixture.
- Knead until the dough is pliable and no longer sticky.
- Cover and leave to rise until doubled in size and springy to the touch.
- Knead again, and place in 2 greased bread tins.
- Cover and leave to prove for 1 hour.
