1 cup very hot water
2 tablespoons butter
1/4 cup sugar
pinch salt
2 teaspoons dried yeast or fresh equivalent
1 egg well beaten
4 cups flour
(see measure conversions for more information)
- Allow to cool to lukewarm.
- Add yeast.
- Add the egg and the flour.
- Beat and leave covered overnight.
- Next day put into greased muffin rings to fill them two thirds full.
- Allow to rise.
- Cook in hot oven for 30 minutes.

A yeast raised muffin more like the English Muffin than the now more familiar sponge type.Ingredients
