2 tablespoons olive oil
1 Spanish onion, skinned and finely chopped
1 inch root ginger, peeled and grated
1 red pepper, deseeded and finely sliced
1 green pepper, deseeded and finely sliced
1 clove garlic, peeled and crushed
3 tablespoons dry sherry
2 tablespoons soy sauce
1/4 pint natural pineapple juice
salt and freshly ground pepper
(see measure conversions for more information)
- Add the pork and allow to brown on both sides.
- Add all the other ingredients.
- Put the lid on the pan and cook over a low heat for about 10 minutes.
- Remove the meat from the pan and put aside on a warmed plate.
- Cook the liquid and vegetables in the pan for a little longer until the liquid is reduced.
- Serve with the pork.
- Boiled rice makes a good accompaniment.

How to make quick pineapple pork with peppers:
Pork steaks cooked with pineapple juice and peppers.
Ingredients
4 boneless pork loin steaks2 tablespoons olive oil

- Fry the onion, garlic and ginger over a medium heat in the oil in a frying pan with a lid.- Add the pork and allow to brown on both sides.

- Cook the liquid and vegetables in the pan for a little longer until the liquid is reduced.
- Serve with the pork.
