How to make quick Irish bread:
A soda bread recipe where the main raising agent is the bicarbonate of soda rather than yeast. Buttermilk also helps to raise the loaf. Ireland is famed for its soda bread more commonly known as 'cake' or 'fahl' depending on the area in Ireland.



Ingredients

8 cups organic flour
1 teaspoon bicarbonate of soda
1/2 pint organic buttermilk
1 teaspoon salt
1 teaspoon cream of tartar
(see measure conversions for more information)

Method

- Sieve flour, bicarbonate of soda, cream of tartar and salt into a basin.
- Make a well in dry ingredients and stir in butter-milk.
- Mix to a stiff dough.
- Divide into two and shape into rounds.
- Prick tops with a fork and place on greased, floured baking tin.
- Bake in oven at approx. 170 degrees centigrade (see temperature conversions) for 45 minutes.
- This also makes good rolls.

Land For Food Production


I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
