How to make quiche Lorraine:
This is a classic French dish which is now very popular across the world. The basis of the recipe is a pastry flan case filled with savory custard which sets during the cooking process much like a custard tart. Contained within the custard is the ham but you can add your own favorite ingredients to change the taste accordingly. It is great for serving at buffets, picnics or as a snack on the move.


enough shortcrust pastry to line flan dish
3 good slices ham, chopped finely
2 eggs
1/2 pint milk
1/4 pint cream
1 tablespoon finely chopped parsley
pinch of cayenne pepper

- Roll out the pastry thinly and use it to line a flan tin or dish.
- Beat the eggs well and mix with the milk and cream.
- Stir in the ham and parsley.
- Season with salt and cayenne pepper.
- Pour this mix into the flan case and bake at 220 degrees C. (see temperature conversions) for 15 minutes and then at 180 degrees C. for 15 more minutes.
- Cool and serve.
