3 1/2 fluid oz double cream
3 tablespoons butter
1 cup soft light brown sugar
1/2 teaspoon vanilla extract
3 tablespoons clear honey
(see measure conversions for more information)
- Put in the oven at 200 degrees C. until brown and toasted.
- Scatter 3 tablespoons of the toasted nuts over base of a greased, shallow tin and put to one side.
- Place the cream, butter, sugar, vanilla and honey in a heavy based saucepan and bring gently to the boil, stirring occasionally.
- Simmer, without stirring, until the mixture reaches the "hard ball" stage.
- Remove from the heat and leave to stand for 5 minutes.
- Stir in the rest of the nuts.
- Pour into the tin over the nuts and spread out evenly.
- Leave to set.

How to make praline toffees:
A delicious, crunchy, nut toffee You can vary the recipe by using different nuts or a mixture of nuts. See Cooking with Sugar for information on the tricky process of boiling sugar.
Ingredients
3 tablespoons hazelnuts, chopped3 1/2 fluid oz double cream
