How to make potato and ham soufflé:
A soufflé style dish to make for your supper.


3oz lean ham, diced
1 tablespoon milk
2 large potatoes, peeled and cooked
1 oz butter
3 egg yolks
3 egg whites, beaten until stiff
2 tablespoons finely chopped parsley
salt and pepper
(see measure conversions for more information)


- Mash the potato with the butter and milk.
- Add the egg yolks to the potato using a food processor.
- Mix in the ham and parsley by hand.
- Season well.
- Fold the beaten egg whites into the potato mix.
- Put into a greased soufflé dish.
- Bake at 180 degrees Celsius for about 30 minutes.
