1 large onion peeled and chopped
2 tablespoons dripping
1/2 pint beef stock
2 peeled chopped tomatoes
3 carrots peeled and sliced
1 head celery chopped
1 bay leaf
1 teaspoon salt
1/2 teaspoon pepper
(see measure conversions for more information)
- Fry the onion until brown.
- Put the meat in and brown all over.
- Add the stock and all the other ingredients.
- Bring to the boil.
- Reduce heat to very low.
- Put the lid on and simmer very slowly for 3 hours.

How to make pot roast:

enough rump or rolled rib of beef for six servings1 large onion peeled and chopped

- Put the dripping into a heavy bottomed pan (which has a lid).- Fry the onion until brown.
- Put the meat in and brown all over.
- Add the stock and all the other ingredients.
- Bring to the boil.
- Reduce heat to very low.
- Put the lid on and simmer very slowly for 3 hours.
