How to make pork with stilton sauce:
Pork goes very well with this sauce made from the famous Stilton cheese.


2lb loin pork
1 dozen sage leaves
1/4 pint crème frâiche
3oz stilton cheese
freshly ground black pepper
(see measure conversions for more information)


- Make slits in the pork rind and insert the sage leaves between the flesh and the rind.
- Brush the rind with oil.
- Sprinkle with salt.
- Roast at 180 degrees C. for about 1 1/2 hours.
- Remove from oven.
- Remove meat from the roasting tin.
- Pour off most of the fat from the roasting tin.
- Put the remaining juices into a saucepan.
- Add the crème frâiche and the stilton.
- Stir over a low heat until the cheese has melted.
- Serve the sauce with the meat.
