1 egg, beaten
the weight of the egg in flour
the weight of the egg in sugar
the weight of the egg in butter
pinch of baking powder
a little vanilla extract
(see measure conversions for more information)
- If the mixture begins to curdle add a little of the flour.
- Gradually add the rest of the flour and the baking powder.
- Add the vanilla extract.
- Pour the plums whilst still very hot into a greased pie dish, filling it nearly to the top.
- Immediately spread the sponge mixture on top.
- Put the pudding immediately into the oven, pre-heated to 400 degrees Fahrenheit (see temperature conversions) for 30 minutes.

How to make plum sponge:
A really easy pudding recipe to make the most of plums when they are in season.
Ingredients

Method
- Cream the sugar with the butter and beat in the egg.- If the mixture begins to curdle add a little of the flour.
- Gradually add the rest of the flour and the baking powder.
- Add the vanilla extract.
- Pour the plums whilst still very hot into a greased pie dish, filling it nearly to the top.
- Immediately spread the sponge mixture on top.
