juice and grated rind 1/2 orange
6oz caster/superfine sugar
1/4 pint water
6 slices white bread, cut into 1/2 inch cubes
2oz butter
2 eggs, separated, whites whisked until stiff
1 teaspoon cinnamon
(see measure conversions for more information)
- Drain the plums reserving the syrup.
- Put the bread cubes into a basin and pour the hot syrup over them.
- Cream the butter until soft and fluffy.
- Add the egg yolks.
- Fold in the bread mixture, the plums and the cinnamon.
- Put into a large, well-greased ovenproof dish.
- Cook at 355 degrees F. for 30-35 minutes until set, then remove from the oven.
- Fold the other half of the sugar into the stiffly beaten egg whites.
- Spoon the egg white and sugar mixture onto the top of the pudding.
- Return to the oven at 310 degrees F. and cook for a further 10 minutes or until the meringue is just golden.
