grated rind and juice of 1 lemon
sugar
3/4 pint water
(see measure conversions for more information)
- Add the water.
- Simmer gently for 15-20 minutes.
- Press the fruit pulp through a nylon.
- Add 12oz of sugar for each 1 punt of puree.
- Put the puree and the sugar back into the cleaned pan.
- Heat gently to dissolve the sugar.
- Bring to the boil and boil for 20-25 minutes.
- Keep in the fridge and use quickly.

How to make plum butter:
Unlike fruit leather this fruit butter will not keep for very long. It is a delicious fruit puree spread or it can be used as a hot sauce for rice puddings, steamed sponge puddings or even ice cream.
Ingredients
3lb plums, skinned and stonedgrated rind and juice of 1 lemon
sugar
3/4 pint water

Method
- Put the plums, lemon rind and juice in to a large saucepan.- Add the water.
- Simmer gently for 15-20 minutes.
- Press the fruit pulp through a nylon.
- Add 12oz of sugar for each 1 punt of puree.
- Put the puree and the sugar back into the cleaned pan.
- Heat gently to dissolve the sugar.
- Bring to the boil and boil for 20-25 minutes.
- Keep in the fridge and use quickly.
