How to make pistachio treats:
A truly delicious sweet. Be careful with vulnerable groups when serving raw egg.


2 tablespoons hazelnuts
1 1/4 cups butter
2 1/2 cups gram flour (chickpea flour)
2 tablespoons desiccated coconut
1/2 teaspoon ground cardamom
1 1/4 cups icing/confectioner's sugar, sifted

for the decoration:

3 tablespoons pistachio nuts, chopped finely
1 egg white, beaten

- Place the hazelnuts in a non stick frying pan and brown carefully over a low heat.
- Allow to cool.
- Chop the nuts.
- Melt the butter in a frying pan.
- Stir in the gram flour and cook over a medium heat for 3 minutes, stirring.
- Add the coconut, cardamom and chopped nuts and mix well.
- Remove the pan from the heat.
- Add the icing sugar and mix well.
- Set aside until mixture is cool enough to handle but is still warm.
- Roll the mixture into walnut sized balls.
- Brush each ball with the egg white.
- Roll each ball in the pistachios.
- Place on a greased tin.
- Chill in fridge.
